AMLA PICKLE

Amla pickle is another traditional South Indian and family recipe passed down from generations. This condiment tastes like a mixture of sour, spicy, sweet and slightly bitter. The health benefits of amla include promoting liver, skin and eye health, regulating blood sugar and cholesterol levels and supporting gut health.



Ingredients: 10 amlas, turmeric powder, chilli powder, asafoetida (dried gum oleoresin tapped from the thick roots of several species of Ferula, a perennial herb in the giant fennel family), mustard seed, 20ml tamarind juice, sesame oil, salt, sugar.
 


Method:
1. Steam the amla for 10 minutes. After it's cooled down, take the seeds out and  place them in a bowl.

2. Soak the tamarind in boiled warm water.

3. Heat the pan and add the sesame oil and cook the mustard seeds.  

4. Add the turmeric powder, chilli powder, asafoetida, tamarind juice, salt and sugar.

5. Mix everything and allow the dish to boil. Pour the hot mixture onto the steamed amla and mix well.

6. Enjoy.
