BROCCOLI SOUP

Broccoli is a highly nutritious green plant from the cabbage family. It was first discovered in the Mediterranean region and cultivated by Italian farmers over 2,000 years ago. This vegetable contains rich sources of antioxidants, fibre, iron, potassium and vitamins A, C, and K. This superfood supports immune health, gut health, eye health, heart health and prevents cancer.


Ingredients: 1 whole broccoli, onion, garlic, 1 cube of chicken stock, curry powder and soy sauce.
 

Method:
1. Chop the broccoli into pieces and boil it in a chicken stock. Make sure the water is only ½ the pot as we’re going
    to reuse the chicken stock water for added
flavouring.

2. Once the broccoli is soft, take it out and let it cool before blending it into a puree.

3. Pour oil in a pan and add finely chopped onion and garlic. Once they turn golden brown, add the broccoli
    puree, curry powder and soy 
sauce.   

4. Mix the ingredients well and add the remaining boiled chicken cube water slowly while mixing. 

5. Dish out and serve.
