Hibiscus flower contains many health benefits, which include antioxidant, anti-inflammatory, regulates blood pressure, reduces cholesterol levels, weight loss effect, anti-microbial properties & anti-diabetic properties. This is a simple hibiscus jelly I made one evening. The flowers are fresh from my garden.

INGREDIENTS: Red algae, hibiscus flower (blended), coconut milk, pandan leaves

Method:
1. Wash the algae and put it into a pot of boiling water.

2. Add the hibiscus and pandan leaves after the algae dissolve.

3. Stir to mix the ingredients. Then, add the coconut milk and stir a few times.

4. Dish out in a bowl, and place it into a refrigerator after it is cooled down.

P.S Hibiscus flower is the main ingredient the others are optional and you could choose according to your palette. I prefer consuming jelly when it is cold so, I put mine into the refrigerator.
