LENTIL AND HERB SOUP

Lentils come from the legume family. It is rich in fibre, plant protein, iron and potassium. Lentils are categorized by their colours. I always use yellow and red lentils. In this recipe, I have decided to use red lentils. The health benefits of lentils include – antioxidant, anti-inflammatory, neuroprotective properties, regulating sugar levels, supporting gut health and protecting the heart.

 
Ingredients: 150g red lentils, ½ red onion, 10 cloves of garlic, mixed dried herbs (basil, oregano, thyme, rosemary, marjoram), curry powder and chili powder.

 
Method:
1. Add chopped red onions and garlic into a pan with oil and fry them until golden brown.

2. Boil the lentils with water in a pot and once they’re cooked, drain the water.

3. Add the fried red onions and garlic together with the remaining oil into the pot with lentils and mix them on low      heat.

4. Add the mixed dried herbs, curry powder and chili powder and mix them well.

5. Pour 100ml of milk and mix all the ingredients and bring it to a boil.

6. Allow the soup to cool and enjoy.
