LENTILS PANCAKE

​Lentils come from the legume family. It is rich in fibre, plant protein, iron and potassium. Lentils are categorized by their colours. I always use yellow and red lentils. In this recipe, I have decided to use red lentils. The health benefits of lentils include – antioxidant, anti-inflammatory, neuroprotective properties, regulating sugar levels, supporting gut health and protecting the heart.

 
Ingredients: 200g red lentils, ½ red onion, 5 cloves of garlic, 2 tablespoons of semolina, 2 eggs, curry powder and chili powder.

 
Method:
1. Soak the red lentils in water for 2 hours until they get soft. Blend them into a puree.  

2. Add finely chopped garlic and onions to the lentils purée.

3. Then add the semolina, curry powder, chili powder and 2 eggs and mix them well.  

4. Make your pancake.

5. Dish out and serve.
