Red aval Ladoo (red flattened rice Ladoo) is a traditional South Indian sweet balls made from red flattened rice. This red rice gets its colour from natural anthocyanin content (health benefits include anti-inflammatory, anti-aging and anti-tumour properties) in the bran layer. Red rice retains its bran layer, which is rich in nutrients and antioxidants.
Ingredients: 200g red aval, 100g roasted peanuts, 100g sugar, 30g pumpkin seeds, 100g desiccated coconut, 10 cashew nuts, 5 tablespoons of ghee, 100ml water and 4 cardamoms. Method: 1. Fry the red aval & cardamom for 3-4 minutes on medium flame. 2. Grind the fried red aval & cardamom coarsely in a dry spice grinder along with peanuts. 3. Heat the pan and add 5 tablespoons of ghee and roast cashews, followed by desiccated coconut. 4. Add the ground red aval, cardamom, peanuts, cashews and desiccated coconut in a mixing bowl and mix well. 5. Boil the water in a pot and add the sugar on a medium flame until the sugar dissolves. Add the sugar water into the mixing bowl and stir well until the mixture thickens. 6. Allow the mixture to slightly cool down before making into small balls.
