Semolina ghee balls are a classic Indian dessert. Semolina helps improve digestion and is good for heart health due to its fibre, iron and Vitamin B contents. It’s low in glycaemic index, which is great for managing sugar levels. Similarly, ghee contains fat-soluble vitamins (A,D,E,K), high levels of antioxidants and butyrate (short-chain fatty acid) that nourishes gut lining and reduces inflammation.

Ingredients: 100g semolina, 50g sugar, 50g ghee, 30g chopped cashews and raisins, ½ teaspoon of cardamom powder.

Method:
1. Roast the cashews and raisins in ghee in a heavy-bottom pan and keep it aside.

2. Use the same ghee to roast the semolina. Then, transfer the semolina into a big bowl.

3. Heat the remaining ghee but don’t allow it to boil.

4. Add the cashews, raisins and sugar into the bowl with semolina and add the heated ghee.

5. Mix all the ingredients with a big spoon and make them into small balls while the ingredients are still hot.
(Be careful not to burn your hand)

6. Cool the balls and store them in a tight container and enjoy them.
