SPICY FISH WITH GALANGAL

Mackerel is a type of oily fish known for its unique dark tiger-like stripes on an iridescent blue-green back. This fish is notable for its rich omega-3 fatty acid content, which benefits heart health, brain health and eye health. Besides that, mackerel is also rich in vitamin B12, which is crucial in red blood cell formation. Galangal is a warming spice known for its antioxidant properties and anti-microbial properties. This recipe is a warming and spicy dish with mackerel and galangal.  



Ingredients: mackerel fish, turmeric powder, chilli powder, curry powder, galangal paste, ginger & garlic
                                paste, salt, cooking oil, 30ml tamarind juice and ½ onion red onion.

 
 

Method:
1. Clean the fish and chop them into medium pieces, then marinate them with chilli powder, turmeric powder,
    curry powder and salt.

2. Pour oil into a wok and fry the fish till golden brown. Keep the fish aside in a bowl.

3. Use the same oil and add chopped onions and cook for 1 minute.

4. Then, add turmeric powder, chilli powder, ginger & garlic paste, galangal paste and tamarind juice. 

5. Stir everything together and bring it to a boil.  

6. Once cooked, add the sauce to the fried fish.     

7. Enjoy.
