Black dhal or black gram is a type of bean mostly cultivated in Southeast Asia. It is also a distinguished staple food in India. The fermented version of this bean is used as a batter for idly and dosa, while the non-fermented is used to make porridge or desserts. The health benefits include – high antioxidant and anti-inflammatory properties, rich in fibre, plant protein, calcium and iron, regulating sugar levels and preventing cancer.

Ingredients: black dhal (soaked in water for 6 hours), cardamoms, nuts (of choice), raisins, milk and sugar.

Method:
  1. Blend the soaked dhal to a smooth watery paste.
  2. Pour the blended dhal into a pot, add cardamom and bring to a boil with medium heat, stirring constantly.
  3. Once cooked add milk and sugar (if you want it) and keep stirring for another 5-10 minutes.
  4. Dish out into a bowl and garnish with raisins and nuts of choice.
