CHICKPEAS KOOTTUKARI

Koottukari is a thick curry dish traditionally served during festivals or celebrations in Kerala, India. This is an easy koottukari cooked with chickpeas. Chickpeas are a vegetable from the legume family. It contains a rich source of potassium, dietary fibre, plant protein, iron, vitamin B6 and magnesium. The health benefits of chickpeas include – weight management, regulating sugar levels, promoting digestion and boosting brain health.

Ingredients – chickpeas, onions, garlic, turmeric spice powder and curry powder, coriander leaves.
Method:
1. Soak the chickpeas in water the night before.
2. Boil the chickpeas in a pot with water.
3. Cut the onions, garlic and coriander leaves.
4. Pour some oil into a pan and cook the onion and garlic. Then add the chickpeas.
5. Stir everything together and cook for 1-2 minutes.
6. Add the turmeric spice powder and curry powder. Stir to mix the dish well. Cook for another 5 minutes.
7. Dish out then sprinkle the coriander leaves to garnish. Enjoy.
