DADAR GULUNG (Indonesian rolled pancake)

​Dadar gulung or kuih ketayap is a type of Indonesian sweet rolled pancake. It is a popular snack from Java, Indonesia. The filling is normally made from coconut and palm sugar. The outer layer is made from rice flour and pandan extract, giving it a green colour. However, I made a slightly different “dadar gulung”. It is made from blue pea flower extract, which gives the pancake a blue colour instead of green (pandan extract).

Ingredients – rice flour, blue pea flower extract, desiccated coconut, homemade apple jam.
Method:
1. Mix the rice flour and blue pea extract. (The batter should be like how you make a  pancake).
2. Mix the apple jam with the desiccated coconut. (filling)
3. Pour oil into a pan and cook a thin layer of pancake.
4. Once cooked, place the pancake in a tray and lay out the filling.
5. Roll out the pancake while it is still hot (like the above shape).
6. Enjoy as a snack.
