HEARTY PUMPKIN SOUP

Health benefits of pumpkin include – being rich in vitamin A, containing antioxidant properties, boost immune function, encourage healthy eyesight, rejuvenates skin, protects the heart and helps in weight management.

Ingredients: pumpkin, onions (chopped), garlic (chopped), chicken or vegetable stock, coriander leaves,
                                and coconut milk.

Method:
  1. Cut the pumpkin into medium size pieces. Boil the pumpkin, onions and garlic with the chicken stock. After the pumpkin turned soft let it cool down.
  2. Blend everything together into a thick soup.
  3. Pour the soup into a pan and heat it up, while adding coconut milk.
  4. Finally, dish out and add coriander leaves as garnish.
  5. Enjoy. ​
