INDIAN-STYLE CAPSICUM AND CORN DISH

This is a simple capsicum and corn vegetable dish made in the Indian style. Capsicum is an excellent source of vitamin A, vitamin C and dietary fibre. Corn contains carotenoids such as zeaxanthin and lutein, which promotes healthy eyesight.

Ingredients – 1 whole onion, 3 cloves of garlic, capsicum, corn, turmeric powder, curry powder,
                                  cumin powder and fennel powder.

Method:
1. Chop the onions, garlic and capsicum.
2. Pour oil into a pan, then add the onions and garlic.
3. After a minute, add capsicum and corn. Cook for 5 minutes.
4. Then, add the spices (curry powder, turmeric powder, cumin powder and fennel powder).
5. Stir everything together and cook for another 5-10 minutes.
6. Dish out and enjoy.
