LENTILS KOOTTUKARI

Lentils come from the legume family. It is rich in fibre, plant protein and potassium. Lentils are categorized by their colours. I always use yellow and red lentils. But in this recipe, I only use yellow lentils. The health benefits of lentils include – antioxidant, anti-inflammatory and neuroprotective properties, regulating sugar levels and protecting the heart.


Ingredients: lentils (soaked in water for 30 minutes), garlic, onion, mustard seeds. curry leaves, dry chilli,
                               turmeric powder, mint leaves


Method:
  1. Boil the lentils in a pot with salt, turmeric powder, and minced garlic.
  2. Pour oil into a pan and cook the mustard seeds, chopped onions and dry chili for 3 minutes.
  3. Once the lentils split open, drain excess water but make sure it has a little water, add the lentils into the pan, and also add curry leaves.
  4. Mix the ingredients together and cook for 2-3 minutes.
  5. Dish out, garnish with mint leaves and enjoy.
